Shredded Salsa Chicken

Looking for a simple, savory chicken recipe? 
You can use this meat in quesadillas, salads, or served over rice.


Shredded Salsa Chicken
4-6 chicken breasts
1 c. of Salsa
1/2 pkg. of Taco Seasoning
1 can black beans, drained
1 can corn, drained (optional)
1-4oz. can diced green chilies (optional)

In crock pot, place chicken and sprinkle with Taco seasoning. Cover with salsa. Cook on low heat for 3-4 hours. Fork chicken, add in black beans, corn, and green chilies, heat through.

Variations:
- Use with black beans and shredded cheese to fill quesadillas.
- Place over shredded lettuce, and top with meat. Add tomatoes, olives, onions, shredded cheese, dressing of choice, and tortilla chips for a quick, easy salad.
- Serve over rice and top with tomatoes, olives, onions, shredded cheese, and sour cream.
