Fish Tacos

Mrs. Fridays Pollock Mini-Fingers
Corn Tortillas
Sauce - Mix 2 T. mayo, 2 T. Greek Plain Yogurt, 1/4 tsp. cumin, 1/8 tsp. garlic powder, 1 tsp. lime juice.
Salsa - 3-4 tomatoes, 1-2 green peppers, 1/2 -1 chopped sweet onion, chopped cilantro, a few drops of Tabasco, a few shakes of dried oregano, salt and pepper to taste, a few shakes of garlic powder, juice of a lime.
Cabbage, thinly sliced or bag of coleslaw mix
Lime wedges


Bake Pollock Mini-Fingers as directed.  Warm Corn Tortillas (I steam them in the microwave), put a little sauce down the center of the tortilla, top with a fish finger, cabbage, salsa, and top with a squeeze of lime juice.
