Breakfast Quiche

2 lbs. frozen hash browns
1/2 c. melted butter
2 c. diced ham, bacon, sausage, Polska Keilbasa or any combination
2 c. shredded cheddar cheese, Colby, or both
Green peppers, onions, and mushrooms are optional
1/2 c. milk
5 eggs (beaten)
salt and pepper to taste

Empty hash browns into a 9" x 13" ungreased Pyrex dish.  Drizzle melted butter over the top and place in a 425 degrees oven for 30 minutes.  Combine meat, cheese, green peppers, onions, and mushrooms and spoon over the hash browns.  Spread evenly.  Beat the eggs and add the milk, salt, and pepper.  Pour egg mixture over the ingredients in the pan.  Bake at 350 degrees for 25-30 minutes.  Let stand 10 minutes before cutting.
