French Dip Sandwiches


FRENCH DIP SANDWICHES
Simple, homemade au jus.  Fabulous!
2 T. butter
1 green onion, chopped
1 T. flour
2 cups beef broth (made with 1 1/2 tsp. Beef Custom Culinary Soup Base and 2 c. boiling water)
1 1/2 lbs. Cobblestone Deli Sliced Beef
Montreal Steak Blend Seasoning or Coarse salt and pepper
4 - 6" Hoagie Buns

In large, shallow skillet over moderate heat, melt butter.  Add onions to butter and saute 2 minutes.  Add flour to butter and onion and cook a minute longer.  Whisk in broth in a slow stream.  Bring sauce to a bubble and allow to simmer over low heat until ready to serve sandwiches.  Pile meat loosely across cutting board.  Season meat with Montreal Steak Blend.  Set out 4 ramekins or small soup cups for dipping sauce, 4 dinner plates, and 4 split hoagie buns.  To assemble, using a pair of tongs, dip meat into loose au jus sauce and pile into buns.  Fill ramekins with extra dipping sauce for the sandwiches.

Optional: Kneader's {copycat} French Dip Sandwich.  Simply place a slice of Swiss cheese on top of meat and place under broiler 'til melted.  Top with bun and dip, it's to die for!
