Lime Cilantro Rice to go with our Hormel Pork Barbacoa

Lime Cilantro Rice
1 lb. long grain rice
l bunch cilantro leaves, chopped
juice of 2 limes
4 cloves of garlic, crushed
1 onion

Chop onion, add garlic, and cilantro. Heat 2 T. oil in 3 qt. saucepan or 12" skillet. Add rice and all chopped ingredients. Saute 3-5 min. stirring frequently. Add 4 c. water with lime juice. Bring to a boil, reduce heat and simmer until the rice absorbs all the liquid. Place a warmed Fresca 10" tortilla on plate. Top with Lime Cilantro Rice, Hormel Pork Barbacoa, warmed black beans, shredded lettuce, tomato, cheese, Creamy Tomatillo Dressing, and Tortilla Strips.
